Banana, White Chocolate & Walnut Cake
These photos do not do the cake justice. It was delicious and I'm proud to put my name against it.
Oops - told you! I can't lie, I am rather embarrassed. But I promise, hand on my heart, it tastes delicious
You will need:160g butter (softened, unsalted)280g caster sugar2 large eggsvanilla extract (remember not essence, never essence!) 2/3 bananas1tsp baking power2 tsp cinnamon200g white chocolate2/3 handfuls of walnuts (halves)
NB: obviously alter chocolate, nuts and cinnamon to your own liking! Or try using sultanas/raisins instead of the chocolate.
Now to Bake;1.) Preheat oven to 170c/325f, gas mark 3. Line a 25 x 20cm baking tin with grease proof paper or a silicon baking tray.
2.) Beat the butter and sugar until thick and creamy. Add in the eggs and vanilla extract whilst continuing to beat. Break bits of the bananas and roughly stir these in then adding the flour, baking powder and cinnamon. Make sure you fold in these dry ingredients gently getting as much air in as possible to make the cake light and fluffy. Break nuts (I usually put walnuts into halves) and 200g of the white chocolate into small chunks and stir into the mixture.
3.) Pour mixture into the baking tin and then into the oven until brown on top and cooked all the way through (use the knife test), usually taking between 30 - 40 minutes.
4.) Once ready, take the cake out of the oven, leave to cool on a cooling rack out of tin.
5.) EAT!
