I couldn't wait to try out Hummingbird Bakery's new book as it's full of wonderfully American recipes from pumpkin classics to boozy bakes.
There is a lovely mix of recipes from cakes, pancakes, biscuits and pies. Plus, a nice range of difficulty. Some recipes don't require many ingredients or steps, whereas others are slightly more technical – you're sure to find something for you.
My first bake from this book had to be the 7up cake – I'd never heard of a cake with soda included before, so had to give it a go!
Their 7up cake, is quite similar in taste to my lemon drizzle cake, but much easier as there aren't as many steps. Keep scrolling for the recipe.
You will need:
165g unsalted butter, softened
320g caster sugar
3 large eggs
200g plain flour
1tsp lemon zest (fresh)
1/2tsp vanilla extract
90ml 7up soda
Method:
1). Pre-heat oven to 170C fan and cream the butter and sugar together until very light and fluffy
2). Add in your eggs and mix well
3). Next, gradually mix in the flour, lemon zest, vanilla extract until smooth
4). Fold in the 7up soda until it's thoroughly combined. Be careful not to overbeat
5). Pour mixture into greased loaf tin and bake for an hour or until golden and cooked in the middle
6). Leave to cool on a wire rack, after a couple hours, it's ready to serve
