God Bless America... and their pancakes!



Fluffy american styled pancakes (so much better than crepes in my opinion). This recipe is by far the best thing since sliced bread.

It's great because it can be made into a sweet or savoury dish. I made it for a 'special' breakfast and it went down great, the funny thing is there isn't anything special about eggs, milk and flour - its so ordinary but these pancakes are so rare in the UK.

You will have everything you already need, stored away in their cupboards/fridge, so lets get started!


You will need...
3 eggs
115g plain flour (or self raising, just don't add baking powder)
1 headed teaspoon baking powder
140ml milk
1 pinch of salt
your chosen fillers/toppings; fruit, berries, syrup, bacon, cheese, crème fraîche, cinnamon extract, vanilla extract etc..


Method...


1. Separate eggs into two bowls. Whites in one, yolks in the other.

2. Mix flour, baking powder and milk to the yolks until smooth batter.
3. Whisk the whites with the salt until it forms stiff peaks (I'd use a standing/hand mixer - trust me, unfortunately I know this from experience. A fork and a man's strong stirring power will not work).
4. Fold whites into batter (you don't need to be too careful here).
5. Heat a non-stick pan on a medium heat (I added a drip of oil here and wiped it around with kitchen roll). Pour batter onto pan and fry for 1-2 minutes. 
6.Once golden and firm, flip* and fry the other side OR before flipping add fillers such as blueberries, cinnamon/vanilla extract, then flip until cooked. 

*When flipping you can try and be a pro and flip it 'pancake style' out of the pan and back in or easy 'no mess' peasy with a spatula. 



I had mine with banana and Nutella – absolutely perfect sunday breakfast in my opinion!

This recipe is a must – simple, cheap and easy!
