My Nonna moved here from Italy in her twenties to marry my Nonno. Her dishes are full of Italian soul and jam packed with flavour. Her simplest dish, I call the store cupboard pasta, is not only the most simple but is made from ingredients you would find in most peoples' homes. So I just had to share this heavenly delight with you.
You will need... (Serves two)
A microwave - my Nonna always cooks her pasta in the microwave. Don't worry if you don't have one, just cook yours on a medium heat on your hob.
150g farfella pasta (or choose whichever you prefer)
1 dash of olive oil
3/4 tablespoons of tomato puree
1 knob of butter or margarine
2 vegetable Oxo cubes
Method...
1). Boil kettle, once boiled put pasta, broken Oxo cubes, oil into a microwaveable bowl. Fill the bowl with water until you can just start to see the water reaching the top of the pasta. Microwave for 10 minutes.
2). Stir pasta so it doesn't dehydrate, make sure there is still some water in the bowl but at this stage it doesn't need to be anywhere near the top like before (top up water if necessary). Add all of the butter/margarine and tomato puree. Give it a thorough stir, before putting it back into microwave for 5 minutes.
3). Make sure pasta is now fully cooked, if not add a couple tablespoons of cold water if the pasta seems dry and reheat for 2 minutes. Then serve, adding your preferred toppings i.e. cheese, basil.

I am soooo the same way. I never eat at an Italian restaurant (I don't eat out much at all really). Seriously when you grow up eating and cooking authentic Italian food your whole life, you can't eat out and not judge the food to very high standards!
