You will need... (roughly makes about 6 doughnuts)
Doughnuts
112g Unsalted Butter (softened)
112g Caster Sugar
2 Eggs
Punnet of blueberries
Zest from half or whole lemon (your preference)
Method...
1). Pre-heat oven to 180C. Beat butter & sugar together until creamy.
2). Add 2 eggs and mix thoroughly
3). Next, add flour then the finely grated lemon zest. Mix well.
4). Grease your doughnut pan with butter and pipe in mixture. Remember not to overfill them as they will expand (unfortunately like mine).
5). Bake for 30/45 minutes. Use a knife of skewer to check if the middle is cooked by inserting into center, if it comes out clear it's ready.
6). Eat straightaway or once cooled - can you really wait?
Finally got to find out what you were planning with the doughnut pan :) They look yummy! Hmm what other ingredients go with lemon... gin and tonic? ;) xx
