There's nothing I love more than a big pot of pasta, especially one home-made and full of green tasty goodness.
All you need is... (serves two/three)
200g pasta (As I mentioned in my spring post if I've got only a small handful of different pastas I usually just cook them all together, I like the rustic look)
3 heaped tablespoons of pesto (My home-made recipe is here or you can use store bought...naughty)
Pinch of salt
1 Veggie Oxo cube
100g green beans, sliced in half
100g Pine nuts
Parmesan cheese, as much as your heart desires
To make it simply...
1). Cook your pasta in the microwave for 7-10 minutes whilst cooking your green beans with a pinch of salt over the hob.
2). Once cooked, drain your pasta and beans but keep aside about a 1/4 cup of the pasta's starch water. Add your beans, pesto, 1/4 starch water and Oxo cube into the pasta and mix well.
3). Toast your pine nuts in a dry pan for a few minutes or until golden then add to your pasta - this step is optional you can just add them straight in.
4). Lastly, add your cheese and serve.
The more parmesan the better if you ask me...
