Why do we only eat Turkey, stuffing and cranberry sauce at Christmas?..If you follow my blog you may have seen my turkey over chicken post, Turkey is so much better for us and is just as versatile as chicken.
The other day I was craving a turkey, stuffing and cranberry sandwich and thought to myself it might be May but why the hell not!? Turkey, cranberry and stuffing parcels were born.
All you need to make 6 medium sized pastries is..
50g Dry stuffing mix
200g Turkey mince
Pinch of salt and pepper
500g Puff pastry (Mine was shop bought shh don't tell anyone!)
Sprinkle of flour to help pastry not stick when rolling
5/6tbsp Cranberry sauce
1 Egg
Method...
1). Make your stuffing by the instructions from the packet. Usually you just add water, mix and then roll into small balls. Bake for 10-15 minutes on a baking tray at 180C.
2). Season your turkey with salt and pepper then cook your meat in a pan on a medium heat. Drain excess water and fat from your turkey once cooked.
For this I transferred my mince to a colander in the sink and gently pressed with a spoon. You want to get rid of as much moisture as possible to keep your pastry nice and dry when you come to add the ingredients together.
3). Whilst you leave your stuffing and turkey to cool. Sprinkle some flour onto a clean surface and roll out your pastry until 1/2cm thick and cut into squares. Mine were 8cm X 8cm squares but you can make them as small or large as you like.
4). Once you've got your squares, add your preference of cranberry, cooled stuffing and turkey to half of your pastry square then fold in half (I joined the top left corner to the bottom right). With a fork press down on the edges to secure the pastry together.
5). After you've made up all your turkey parcels carefully brush them with egg wash, I only wash the crease and a bit on the top to give them a bit of colour.
6). Now you can either bake them for about 30 minutes or until pastry cooked at 200C or you can freeze them in an air tight container. If you want to cook them from frozen just add them straight to your preheated 180C oven and bake for 40-50 minutes, don't defrost them.
The bakes when cooked come out so moist.
I really enjoy making these because they're so simple and you can add whatever fillings you want - sausage and beans or chicken and bbq sauce or even lamb like these. Any other ideas? In our house Christmas had come early in these adorable turkey parcels and I couldn't be happier :P
