Meringue is so easy to make, it only takes 5 simple steps.
All you need is...
- 4 egg whites
- 9oz caster sugar
- 1 teaspoon of malt vinegar
- 2 teaspoons of vanilla extract
To serve, I lathered the meringue with 250ml of whipped double cream, white chocolate and summer berries. My Nan always bakes hers with chopped, toasted hazelnuts and tops with raspberries - it's delicious! The choice is yours :)
1. Preheat oven at 180C. Separate your eggs, putting your whites in one bowl and yolks in another.
Top tip - use a stainless steel mixing bowl and make sure its clean and hasn't had any grubby hands touching it - a greasy bowl is bad news for your meringue (trust me).
2. Next, mix your egg whites, sugar, vinegar and vanilla together.
3. Whisk thoroughly until thick and you can tip it over your head without getting covered.
4. Spoon your heavenly dream into a baking tray lined with grease proof paper and put in the oven for 1 hour until a crispy shell has formed and a stiff marshmallow inside.
5. Leave to cool for 30 minutes whilst you prepare your toppings. I whipped the double cream until thick and chopped strawberries, blueberries and white chocolate into small chunks and covered the top of my gorgeous pudding.
