Goodbye expensive boxes of Ferrero Rochers and hello Italian balls of hazelnut heaven...
You will need... (up to 35 balls depending on size)
100g whole raw hazelnuts plus 35 extra hazelnuts for the centre of the Rochers
1 cup of Nutella (or another hazelnut chocolate spread)
60g Ice cream wafers crushed
400g chocolate
Method...
1). Pre-heat oven to 180c (360f).
2). Spread out all of your hazelnuts and bake for 10 minutes on a baking tray.
3). Remove from oven and wrap in a clean tea towel. Rub the nuts to remove the hazelnut skins. Then finely blitz the nuts making sure to set aside 35 whole hazelnuts for your Ferrero centers.
4). In a small bowl, mix your Nutella and chopped hazelnuts until well combined. Freeze until the mixture is stiff enough to be rolled into balls (takes about 30 minutes).
5). Working quickly while the mixture is stiff, mould 1 slightly heaped teaspoon of choc hazelnut mixture around 1 whole hazelnut, then roll it in the chopped ice-cream wafers. Freeze again until the balls are firm.
6). Melt your chocolate and coat each ball draining off excess chocolate. Sit the balls on grease proof paper and in the fridge to set for at least 30 minutes.
7). EAT.
I served mine in truffle cases as they fit perfect and look like the real Ferrero Rochers however i'll let you in on a secret..ours taste better and I'll put my reputation on that too!
