Eggs in purgatory (Uova al purgatorio)

















Dan's Mammy gave us this adorable single egg frying pan the other day and I've been pondering on what to use until my Nonna told me about Uova al purgatorio (meaning eggs in purgatory). It was delicious.




All you need is.. (serves one)


Half a tin of chopped tomatoes
1 egg
Parmesan cheese (amount depends on your preference, I smother mine)
1 teaspoon of chili flakes
1 teaspoon of garlic powder 
1 teaspoon of mixed herbs
Sprinkle of salt and pepper
Bread and lots of it.. I have been known to go through a whole loaf!

Optional; To make it more hearty you could add spinach or chorizo and fried onions

















(If your adding more ingredients I'd cook these first then add them in when the seasoning is added. If using spinach add at the very end.)

If not then start off by adding your tomatoes to your frying pan. If your only cooking for one serving I would recommend getting a small pan or just use a normal sized one but double/triple the servings. Perfect excuse to indulge on a spring evening.

Add all your seasonings and carefully stir. Bring to a simmering boil.






 Once your tomatoes are boiling, crack your egg into the pan and cook. If like me your pan is overflowing and doesn't seem to want to cook, use the grill but be careful not to overcook the egg. You want it cooked but still nice and gooey.



 Once your egg is cooked sprinkle over your mixed herbs and cheese. Grab your bread and get stuck in!





















Ideally I would love to use fresh herbs and garlic but I can't justify the price most of the time as I never use it all up in time! 

But using dried ingredients in this dish doesn't affect it as its so tasty from the egg and the tomato the seasoning just gives it that extra punchy kick of flavour.

I could eat this all day long, it's so tasty yet so healthy.
A dish that makes everyone want to get stuck in.
