I've been going cookie crazy at the moment baking all sorts like my Peanut & Double Choco Chunk batch. Here I present you with my lemon curd & white choco chunk cookies!
You need...
125g butter, softened
100g light brown sugar
125g caster sugar
1 egg, lightly beaton
1 tsp vanilla extract
225g self-raising flour
1/2 tsp salt
200g white chocolate buttons
100g lemon curd
Method...
1). Preheat oven to 180C, gas mark 4
2). Cream your butter and sugar together until creamy.
3). Next, combine in your egg and vanilla
4). Fold in flour, salt and 3/4 of your chocolate.
5). Roll your cookie dough into walnut size balls and put them onto a greased baking tin with at least 3cm gap from the next. Make sure to leave out half of your dough.
6). With the balls on the tray, flattened them down and add one tablespoon of lemon curd to the middle.
7). With your leftover cookie dough make the same size balls, flatten them the same as before and put them onto your lemon cookies to seal the lemon curd inside. Add your chocolate to the top.
8). Bake for 10-15 middles until the edges of the cookies have turned golden brown.
9). Once baked, take them out and leave to cool for 10 minutes before transferring to a cooling rack.
These cookies didn't have a gooey middle at the end but the lemon flavour is infused throughout and gives a golden glaze where it has ran through the cookie.
Cookies are great for baking spur of the moment because you can add anything to them! What's your favourite cookie filling?
