I recently discovered brown rice pasta. It's as it states pasta made from brown rice, so no wheat - which means no bloated feeling for us! Woo I can eat as much pasta as I want and not feel like the I'm going to implode.
So here is my homemade herby, bean & tomato pasta. No additives, no preservatives, just good old fashioned Italian inspired deliciousness
1) Firstly cover your pasta in boiling water and cook in the microwave for 9-10 minutes. I like my pasta with abit of crunch so I usually cook it for 9.
2) Once cooked, drain the water and add your beans, tomatoes and seasoning and give it a good old mix and serve or put it in tupperware for your lunch. You could eat it cold but I usually heat mine up for a minute.
I wouldn't judge you if you added cheese or a slice of bread to this either you naughty thing.
This meal is great for banishing boring lunchboxes because its light and not as stodgy as normal pasta. Unfortunately it is slightly more expensive but it's full of good fiber and protein. Plus it even has a lower calorie count to whole wheat pasta so all in all it's a much better choice if you can afford to make the substitute.
