Cauliflower cheddar cheese soup


I find it so difficult to eat well in January, it's cold, wet and all I want to do is hibernate in front of the telly with my duvet and a nice plate of pieLuckily I've found the ultimate comfort soup to warm up – plus it provides a great source of vitamins. 


You will need:
1 knob of butter
1 large onion, chopped
1 large cauliflower, cut into florets
1 large potato, peeled and cut into chunks
Couple pinches of salt and black pepper (to taste)
700ml veg stock (I used an Oxo cube)
400ml semi-skimmed milk
150g cheddar cheese, grated

Method:
1). Using a large saucepan, heat the butter. Once the butter has mostly melted add in the onion and cook until softened. This should take about about 5 minutes – make sure to stir often. 

2). Add the chopped cauliflower, potato, stock, milk, cheese (100g) and seasoning. Bring to the boil, then reduce the heat and leave to simmer for 30 mins or until the veg is soft.

3). Add your soup into a blender and whizz until you get a deliciously creamy soup. 

4). When ready to serve, top with the remaining cheese and stir through.

It's that easy! It can last up to 2-3 days if you refrigerate it in an airtight container. Or try freezing it – great as a quick tea!
