The best Oreo milkshake you'll ever have

I'm a bit obsessed with milkshakes – I find it difficult to resist them 99% of the time. Plus, knowing how easy they are to make from scratch really hasn't helped.

Macaroni cheese with prosciutto and leeks

Macaroni cheese, for me, is an ultimate comfort food. So when I heard about a twist on the classic, I had to try it (& it's not just adding prosciutto/leeks).

Cinnamon sugar and Nutella filled bites

The other day I combined two of my favourite things; Nutella and cinnamon sugar. Sat in my kitchen, craving something sweet I didn't have enough butter to bake anything, but remembered I had a couple sheets of puff pastry left – score! And that was when my cinnamon sugar and Nutella filled bites were born.

Buttercream filled carrot cupcakes

Recently I've been going carrot cake crazy! They're just so flavoursome, in comparison to many others. The only problem has been that they're quite time consuming to make, with all the carrot grating etc. But I've found a quick-fix solution! Trust me you'll thank me for this one!

Egg Fried Cauliflower Rice*

Chinese takeaways are my kryptonite, my one weakness that I just cannot say no to. So when I found a carb free egg fried rice on Pinterest I had to try it.

A look back on 2014

As it's now 2015, it feels only mandatory to look back first and learn from the past before being able to look towards the future.

I started this blog in November 2014 and cannot believe how much it's helped me grow and meet people I'd never of imagined. To celebrate the year I'm sharing my favourite recipes with you that have started to get covered in blogsphere dust and slowly drift into the unknown. They may be old but they are still 100% fabulous!

Lets Banish Boring Lunchboxes!

I am completely stuck in a rut when it comes to my lunch. Working in an office with no canteen nor shops nearby is becoming a real problem for me.

Oreo Pancakes

Happy Pancake Day everyone! I really didn't know what to post today, I didn't want to make a classic it had to be something different. Then I saw an American pin for  'Oreo pancakes' and thought that's it! Looking through the recipe made my teeth hurt and would be too much even to have as a dessert. So here is my own recipe for healthy Oreo cookies pancakes.

Bruschetta & That Summer Feeling*

It's absolutely crazy in the UK at the moment. There's a horrible wet and windy storm going on outside and all I want  is to be on some paradise island somewhere sunbathing. Unfortunately, that isn't going to happen, instead I must bring the sun to me (through taste anyway, i'm not a miracle worker!).

One of my favourite summer meals has to be bruschetta. Its such a simple yet tasty meal and one I can make anytime (as long as I've got a couple tomatoes rolling around). You might not even have to leave the house either! Perfect store cupboard meal ;)

HOW TO; Poach An Egg

Now, this post may seem slightly pointless but I swear to you it has taken me years to master the art of poaching an egg! I love eggs they are so versatile. You can fry them, scramble them, bake them - you name it i'm sure you can do it at ease!

But then we have poaching... I use to get so confused with all the different poaching utensils and methods out there! I've been told to use clingfilm, a silicon cupcake mould, a mug, vinegar..must I go on? Luckily no more forums, no more asking questions because
I have finally found a technique that works time after time!

Dairy-Free Chocolate Peanut Gelato

Firstly, I must say I've just purchased my new favourite play thing! Can you guess what it is?.. ITS A CAMERA! Sony RX100 - Literally takes the best photographs possible due to its humongous sensor. It has definitely made the difference to my photographs, don't you think? Worth checking out if your looking into buying one.

Anyway.. now on to more important pressing matters...GUILT FREE TASTINESS!

I've got the perfect thing to brighten your Monday, ice cream without the premium price - I thought that would get your attention and you probably won't even need to leave your house to make it! I'm a sucker for these store cupboard treats :P

Veg & Gammon Cawl Pys

 *Welsh word for hearty soup

I have been given this wonderful recipe by my welsh born and bred mother-in-law, a homemade soup that you don't even need a blender for.

It's the easiest, tastiest thing you can make at home since sliced bread!

Frying Pan Brie, Cranberry and Ham Toastie

Say goodbye to toastie makers. I learnt this method when I was a teenager working for my local pub and never looked back! It is easier to clean and inexpensive using utensils in most kitchens. Plus, its another of my great recipes that you can rustle up with items in your store cupboard.
