Quick and easy apple pancakes

A stack of fresh pancakes is one of my favourite sights. This apple pancake recipe is perfect for breakfast or dessert, depending on what you accompany it with.

Apple and cinnamon – is there a better combo? The smell of this cooking is absolutely divine and fills the air with an amazing warmth. 

These apple pancakes are surprisingly quick and easy to whip up, making them great for kids to help out with. Plus, without the ice cream or syrup (which is optional), they're pretty healthy too – win, win!




Ingredients:
1/2 cup self-raising flour
2 tbsp caster sugar
1/2 tsp ground cinnamon
1 egg
1/3 cup milk
2 Granny Smith apples, peeled and grated
rapeseed oil spray

Options to serve with pancakes:
Breakfast
Golden syrup
yoghurt
fresh berries

Dessert
Ice cream
Frozen yoghurt
Maple syrup

Method:
1). Mix flour, sugar and cinnamon in a bowl

2). Whisk in the egg and milk until smooth

3). Fold in grated apple until mixed well

4). Heat your pan over a low heat and spray with oil. Ladle the pancake mix into the pan and flatten so it resembles a circle

5). Cook pancake for 1 minute each side, or until golden brown. Repeat step 4/5 until you've used all the mixture

6). Serve alone, or with some tasty options similar to above. Enjoy!
